Shavkapito Qvevri

Shavkapito, made using the traditional Qvevri method, embodies the rich, ancient winemaking heritage of Georgia. This distinctive red wine is made from hand-harvested Shavkapito grapes, carefully selected to ensure the highest quality.

After harvesting, the grapes are placed into Qvevri, large clay vessel buried underground. This method allows for natural fermentation with extended skin contact, which enhances the wine’s color and flavor complexity. The fermentation process, aided by indigenous yeasts, occurs in these Qvevri, which also serves as the aging vessel. The wine remains in the Qvevri for several months, where it develops a deep, nuanced character and integrates the flavors from the skins and seeds.

The resulting wine showcases a rich, deep ruby color with complex aromatic layers. On the nose, it reveals inviting notes of ripe dark fruit, such as blackberry and plum, intermingled with subtle hints of spice, earth, and leather. The palate is full-bodied and robust, featuring well-structured tannins and a velvety texture. The extended aging in Qvevri imparts additional layers of complexity, including nuanced flavors of dried fruit and a touch of smokiness.
