Traditional Qvevri Method

One of the most defining aspects of Kartli's winemaking is the use of Qvevri, large, egg-shaped clay vessels buried underground. This traditional method dates back thousands of years and is integral to Georgian winemaking heritage. After the grapes are harvested, they are placed in the Qvevri, where fermentation occurs naturally with the help of indigenous yeast. The wine is then aged in the Qvevri, which imparts distinct flavors and textures to the final product. This method is especially favored for producing amber or orange wines, where white grape skins are left in contact with the juice, resulting in rich, complex flavors.

Modern Fermentation Techniques

Alongside the traditional Qvevri method, Kartli winemakers also embrace modern fermentation techniques. Stainless-steel tanks are commonly used for their precise temperature control, which helps preserve the fresh and fruity characteristics of the wine. This method is particularly popular for producing crisp and vibrant white wines, such as those made from Goruli Mtsvane, where maintaining acidity and aromatic purity is key.
